This is the Calcutta / Kolkata Tangra style Chilli Chicken made by the Chinese community of Kolkata, which I had learnt during my college days from one of my acquaintance.

Ingredients and spices that need to be Make ready to make Chilli Chicken:
- 1 whole chicken about 1 kg cut into small curry size
- for Chicken Marination
- 1 egg
- 2 tsp Garlic paste
- 2 tsp Soya sauce
- 1/2 tsp Salt
- 1/2 Tsp Finely Crushed Black pepper
- 4 tbsp Cornflour
- for cooking-
- 2-3 medium sized onions
- 1 Garlic pod/ bulb Chopped
- 3-4 Fresh Chillies Or more as per taste
- As required Small amount of Spring onion
- 1/4 tsp Crushed Black pepper
- 1.5 tbsp Soya sauce
- 2 tbsp Corn flour
- 1.5 -2 cups Water
- 1/4 tsp Salt or as per taste
- 1 tbsp Chinese Red Chilli sauce (optional)
- As needed vegetable oil to fry
- for Garnishing
- As required Little Spring onion
Steps to make to make Chilli Chicken
- In a bowl, add the chicken pieces and ingredients for Marination, except the corn flour. Let it rest for at least an hour.


- In the meantime, prepare the onion- divide it into two halves, chop the halves into 4 pieces and separate it as seen in picture, chop the garlic, chilli as desired by you, if adding capsicum chop/ cut that too into square type shape, chop the spring onion too.

- After an hour, heat the veg oil to fry the marinated chicken. Add the cornflour to the marinated chicken and mix well. Fry in small batches till it is golden brown in colour, keep the fried chicken on kitchen tissue paper to absorb extra oil.



- Prepare the cornflour slurry with the water. In a Chinese wok, heat about 1/4 cup Veg oil (use the same fried oil). Add the garlic and then the onion, spring onion & chilli and saute it, add salt and black pepper, no need to brown the garlic & onion, add the fried chicken & mix. Now add the soya sauce and Chinese Red chilli sauce (optional) and mix well.



- Now add the cornflour slurry and cook for another 3-5 minutes, mixing it so that no lumps are formed. Adjust the gravy consistency as per your desire (if you want more gravy add little more cornflour and water slurry). Check salt and other seasoning and adjust as per your taste. For us this recipe works fine. Serve hot with Fried rice or noodles/ chowmein.
